Italian sparkling wines represent a category of highly appreciated effervescent wines
both in Italy and abroad. Their history, the territory of origin and the production methods
vary significantly, helping to create a wide range of flavours, aromas and
texture.
Origin and Territory
Italy is one of the world's leading producers of sparkling wines, with a variety of regions that stand out for their bubbly production. The most famous areas include:
Franciacorta and Oltre Po' Pavese (Lombardy): among the most renowned for the production of high-quality sparkling wines, similar to French Champagne.
Prosecco (Veneto and Friuli-Venezia Giulia): famous for its fresh and light style, among the best-selling in the world.
Trento DOC (Trentino-Alto Adige): specialized in the production of classic method sparkling wines.
Asti (Piedmont): known for Asti Spumante and Moscato d'Asti, characterized by sweetness and low alcohol content.
Winemaking Method
Italian sparkling wines can be produced mainly through two methods:
Classic Method: Also used for Champagne, with refermentation in the bottle. Key steps include the addition of "liqueur de tirage" to trigger the second fermentation.
Charmat Method: It involves refermentation in large autoclaves, suitable for fresh, aromatic and fruity wines.
Food Pairings
Franciacorta Brut: Perfect with fish dishes and sushi.
Prosecco: Excellent as an aperitif.
Asti Spumante: Ideal for desserts such as panettone.
Trento DOC Rosé: Pairs well with white meats and fresh cheeses.
