After seven years of research and reflection, a wine has been created that embodies the character and emotion of its unique Terroir.
The temperature variations, the calcareous soil and the deep roots of the vine give minerality and flavour.
In the cellar, attention and respect for the grapes preserve their integrity, giving life to fine, elegant and creamy bubbles.
The aging on the lees further enriches the wine, making it “simply complex”.

The Eocene is a geological epoch in which the great mountain ranges of today were formed and consequently our precious compact clay and limestone soils.
Eocene means "new dawn" and is in fact seen as the protagonist of huge climate changes, a theme as ancient as it is current.
Specifically, our current hilly environment at the time was a reef with a significant presence of coralline algae and shark teeth, typical of a coastal marine environment with shallow waters, high temperatures and clear waters.

The care we put into the vineyard is meticulous: we reduce the use of machinery and pesticides to a minimum, preferring manual work that respects the balance of the soil and favors the presence of wild microfauna.
In the cellar, once the grapes have been pressed, all the marc is recovered to be transformed into compost, which will become a beneficial organic biofertilizer for our vineyards.
The harvest is completely manual, ensuring that each bunch arrives at the cellar intact, ready for a delicate pressing that preserves the purity of the must.

Splendid pale straw color with “pearl” reflections, small and persistent bubbles rise from the glass.
Intense aromas of pear and apple blend with mineral and iodine tones.
The natural roundness is given by the presence of refermentation yeasts which naturally settle on the bottom of the bottle.
Extremely elegant and balanced.
The sip is delicate and enveloping, which stands out in its balance, accompanied by fruity notes.
In the glass it gives off sweet floral and mineral notes.
Extreme attention to the entire production process has allowed us to maintain a quantity of sulphites lower than the limits imposed by the organic wine production regulations.

Grape variety: 100% Glera.

Production area: Colli di Monfumo, altitude from 250 to 300 m above sea level.

Land Characteristics: Our vineyards are located in the designated ASOLO DOCG area and are situated on the steepest slopes of the Asolo hills.
The Colli Asolani area features clayey soil on which mostly “calcareous marl” rests, that is, rocks sedimented over the centuries and mainly made up of limestone mixed with thinner clayey and pebbly material, called “sandstone rock”.

Our grapes, especially Glera, find their ideal habitat here. The hills of Asolo, with their unique microclimate, are perfect for the production of Prosecco Asolo DOCG, a wine that embodies the tradition and typicality of this land. The native varieties, such as Bianchetta, Perera and Verdiso, further enrich our offer, expressing the diversity and richness of our territory.
