The product briefly:
Grape variety: 100% Cabernet Sauvignon
Production area: Colli di Castelcucco, Monfumo, Asolo.
Land characteristics: Asolani hills, altitude 200-250 meters/sm, south-east exposure, slightly calcareous clay soil, non-weeded vineyards.
Color: intense red with purple reflections. Evident notes of plum jam and wild berries, with hints of tobacco and vanilla. Good structure, characteristic and complex, with a strong tannic boost still evident.
Serving temperature: 16-18 C°
Alcohol content: 14.50%
Winemaking: traditional method with maceration on the skins for at least 15 days with double daily pumping over at the end of fermentation, racking and passage into oak barrels.
Yield per hectare: 40 quintals/hectare
Harvest period: Totally manual harvest, third ten days of October
Pairings: Ideal for meat-based second courses.
