The product briefly:
Grape variety: 100% Pinot Grigio.
Production area: planting area in the municipalities of Fagarè, Vallonto, Fontanelle in the Treviso area.
Soil characteristics: clayey soil of semi-alluvial origin, Guyot training system, 4,500 plants per hectare.
Colour: full straw yellow, intense and elegant aroma, with fruity notes of peach and citrus fruits and a light spiciness of nutmeg.
Serving temperature: 8° C, in very cold carré glasses.
Alcohol content: 12.50%
Refinement: refinement in bottle for 3 months, before being put on the market.
Vinification: after destemming and pressing, this is followed by soft pressing with a yield of 50% in free-run must, the fermentation of which takes place with selected yeasts for 15 days at a controlled temperature of 13° C. The maturation continues on the own yeasts 5/6 months and then move on to racking, filtration and refinement in the bottle for 3 months, before being put on the market.
Yield per hectare: yield 110 q/ha.
Harvest period: Totally manual harvest in the last ten days of August.
